Banana Cake
1/2 Cup butter
1 Cup sugar
1 egg
4 medium bananas, overripe, mashed
1 teaspoon baking soda
1 Tablespoons milk
1 1/2 cups flour
1 teaspoon baking powder
dash of salt
Mix butter and sugar. Add egg and mashed bananas. Add milk,
baking powder, salt and finally flour. Butter and flour two 9"
cake pans and line with wax paper. Bake at 350oF for 25 minutes
or until done (a tooth pick emerges clean). For a higher cake,
double the recipe and use three 9 inch cake pans. Also make
excellent cup cakes; back cup cakes 15-20 minutes.
Frosting
1 Cup butter
11/2-2 Cups powdered sugar
1 teaspoon lemon juice
food coloring
Beat the butter and lemon juice until combined. Add powdered
sugar until it tastes good to you; add food coloring if desired.
