from the book "Biscotti" by Lou Seibert Pappas with some FAM variations
1C walnuts (place in a shallow pan and bake in a preheated 350o oven for 8-10 minutes to toast; let cool)
1/2 C finely ground oatmeal (place oatmeal in coffee grinder; grind
for 12 seconds)
1/2 C butter
3/4 C dark brown sugar, packed
2 eggs
2 Tablespoons Kahlua or double-strength coffee
1 teaspoon vanila
2 C whole wheat flour
1 1/2 teaspoons baking powder
1/4 teastpoon salt
Cream butter and suger until light and fluffy. Beat in eggs, Kahlua,
and vanilla. Add baking powder and salt and mix in. Add flour
and mix. Mix in oat flour. Coarsely chop nuts and fold in.
Divide dough in thirds. On a greased and floured baking sheet, pat
out three logs about 1/2 inch high, 1 1/2 inches wide and 12 inches long.
Space the logs at least 2 inches apart. Bake in preheated 325o oven
for 25 minutes. Let cool for 5 minutes. With a serrated knife
slice diagonally on a 45o angle about 1/2 inch thick. Lay the slices
flat on the baking sheet and return to the oven for 10 minutes. Remove,
turn over, bake again for 10 minutes. Let cool. Makes about
3 1/2 to 4 dozen.
