Pannukakku  (Beth Flynn, 2003)

1/4 Cup butter 
2 eggs
1 1/2 cup evaporated milk
1/2 cup milk
1 cup all purpose flour
2 tablespoons sugar
1 teaspoon salt

Preheat oven to 375 oF.  Place butter into a cast iron pan and place in oven to melt.  In a large bowl, with a wire whisk, beat eggs and add milk, evaporated milk, flour, sugar and salt, beating until mixture is very smooth.  Pour batter into the sizzling hot cast iron pan (can use nonstick round pans, but then use two) and bake for 30-40 minutes.  Remove from pan as soon as possible to avoid sticking.  Makes 8 servings.  Can be frozen and reheated.
