Phra Rham Long Long (American Thai)

firm tofu
Spinach
canola oil

Place block of firm tofu on a screen (splatter screen works well) and place on a plate. Invert a small plate on top of the tofu and add a weight (a bowl full of water is fine).  Allow to press for 45minutes -4 hours). Cut into 3/4” cubes. Fry tofu in hot oil (8 cubes take 4 minutes to get crispy). 

Preapare Thai Peanut sauce.

Briefly cook the spinach by submerging it into boiling water and immediately removing it to drain.

Place spinach on plate, add tofu cubes, add sauce.  Serve with rice.
